Real information the hotels won't give you. How many times have we called hotels and been told they have something only to get there and its not the case?

2009 San Francisco Zagat...price is right, most of the restaurants are still in business. I found this wonderful dim sum place on Clement Street, Good Luck Dim Sum that was worth the price of this book. My favorite dim sum restaurant no longer serves dim sum after years of going there. The book is small enough that it easily goes into my suitcase and I am sure that no matter what the price range, I am getting a good meal.

HACCP is the acronym for Hazard Analysis of Critical Control Points. This text, by Arduser and Brown is the be all and end all on the topic - in my view. It even comes with a companion CD-ROM that contains all forms from the book in Adobe Acrobat (PDF) and MS Word format. This is a major time saver when it comes to preparing and administering the required tests to staff members and the newly hired.
The comprehensive 530+ page text covers everything I can think of that relates to food safety in restaurants and other eateries. It is designed to teach food service managers and their employees the specifics of food safety in accordance with the FDA Food Code. This excellent training manual is in large print format that makes it easy to read. The writing is easy to understand and the authors were careful to explain key concepts and terms so that even a novice can study it alone.
The seven comprehensive chapters in the manual cover the following topics: Hazards to Food Safety; Factors Affecting Food-Born Illness; Food Safety Regulations; Following The Flow of Food; HACCP; and the Facility Plan. These are followed by an extremely helpful Glossary of terms. The Appendix includes all forms needed to meet the FDA requirements and to run an efficient and safe establishment. Included are checklists, signage, compliance checklists, and equipment cleaning charts, allergen-control program worksheet along with job descriptions for personnel. There is even a Certificate of Completion to certify that staff members have taken and passed the required tests (included).
With the rise in reports of food-borne illnesses and deaths it is essential that every food service operation adhere to the regulations and safety procedures at all times. In my view, this book is essential to ensure you are in total compliance.
As one who has conducted training I find this book deserves 5 stars for its complete coverage of the subject matter in an easy to digest all-in-one format. I highly recommend this book.

Often people who start a restaurant are creative people who are excellent at visualizing their ideas and sadly lacking in skills that help them realize the practical details, forgetting that without expertise in the practical details, their ideas will never get past their home kitchens. Opening a Restaurant is a detailed plan on how to organize your restaurant ideas into something that will a) help you sell your ideas to loan officers and other investors, and b) clarify your vision to help you avoid the pitfalls that drag down most new restaurants within their first year of opening.
What this book will do is teach you how to build a business plan--the document that any institutional lender or investor will want to see before deciding to plunk down money on your hip, new concept. The book is totally specific to the restaurant/food service industry, and weeds out what you need to know from other business-plan instruction manuals, listing many questions that it would be helpful for a new business-owner (or the owner of an existing business planning to make modifications or reassess existing strategies/trends). The book also details how to put together feasibility analysis (both for your restaurant as a whole and for specific project), a marketing plan, how to gather facts and make valid estimates from them, and how to make your plan look professional.
There are two drawbacks to this book. Despite the excellent advice that it gives, the structure can be very confusing at times. For example, throughout the book, Fuller tells you to come up with estimates and answers to questions, but doesn't tell you how to make the estimate or find out the answers to the questions until almost the end of the book. The other drawback is that the formatting and editing of the book leave something to be desired--the information you need could be located in any of several different places. If you have time to read the entire book before starting, this is an excellent book, but looking for a specific answer to a quick question may require more time than you'd like to use. On the up side, there's a good guide to online resources.
Overall, a great little book for clarifying your ideas about your restaurant and putting together a restaurant-specific business plan; I just wish it were organized a little better.

This was a very helpful starting point for those who are looking for general knowledge on what it might take to open a restaurant. One of most important aspects are their estimates of the funds needed. Of course, the exact amounts are going to vary from each person, but this book does a great job of giving you idea of "ballpark" numbers. A lot of the book won't apply to everyone since it breaks down the different types of restaurant but like I mentioned earlier, it's a good starting point. I personally found it to be very useful and brings of very good tips and insight on some of the differences between a good and bad restaurant. Overall, I strongly recommend this book to anyone who is in the beginning stages of wanting to open a restaurant.

I bought this book at Barnes and Noble and must say that I liked the layout and that it is easy to read. It has a lot of information in it, although I would have liked to have more referrals to other sources of information as well. This book gives you a great bit of motivation to finally stop thinking about an own business but doing it. I would recommend it to everyone who hasn't yet decided if or if not. Other than that it is not meant to be your guideline to opening your own restaurant since it doesn't give you enough information.
Pros: Easy to read, gives motivation, examples to determine costs, tips and hints to help you out, very well structured.
Cons: Doesn't give enough information on each chapter, doesn't refer enough to other information sources.
It still has been nice to read this book and very interesting.

Amy Jorgensen, has taken what is sometimes a boring, seemingly pie in the sky topic and explained it in a short, easy to digest format. Bravo! I, like most people, am too busy to spend time reading long manuals, nor do I have the resources to pay professionals to do my marketing and advertising for me. This book is the answer for me.
The author reminds us of some very basic things in the food service business - obvious things like `take care of your customer' which we know, but sometimes forget. Thanks Amy for reminding me of my most precious asset - my customers.
Among the many things learned from this book I am most impressed with the great number of quick and easy methods we can use for marketing and advertising to increase profits. Let's face it, as much as we love the business, the bottom line is still the bottom line. This book helps us do some inexpensive things to increase profits.
Until I read this book I did not realize, for instance, that the menu itself could have such a great impact in terms of marketing. There is good information included for showing your staff how to increase sales and many other no additional cost and low cost methods to marketing the business.
I find this exciting in itself!
This book has value way beyond what its length and cost might suggest. I wish I had read this years ago.

Francisco Migoya has done it again, a wonderful book on a variety of pastries, entremets(cakes), savories, and more. It is divided into sections of business such as the pastry shop, bakery, etc. Mainly made for commercial use with servings of 6 cakes to 20 individual portions and special supplies. There are some mistakes in the components of some recipes such as 12 cake layers instead of 2 but if you read through the recipe first you'll be prepared. Overall it is nice but geared toward larger sizes and specialized machines so it might not be suited for the avid home baker but a good book.

I listened to this CD on my drive to and from work. As a person with a long career in the hospitality business in NC, I was already aware of some of Meyer's success. However, it was an unexpected treat for the senses the hear all the scrumptious details that has gone into the creation of USHG. Meyer's story 'reads' like well blended Bordeaux; part Gourmet Magazine, part business how-to, and part New Yorker Magazine.It is a wonderful peak behind the curtain of a not only the famous Union Square Cafe, but also Meyer's other restaurants and ventures where USHG hospitality and customer loyalty is legendary. Few companies have enjoyed the longstanding successes that Meyer's has created and nurtured. Setting the Table is an inspiring read for anyone interested in what it takes to achieve true business excellence.

A year or so ago, a blogger with a special love for Paris bemoaned the way Americans read English-language restaurant guides and then make predictable choices:
"I've given up the occasionally useful Patricia Wells [The Food Lover's Guide to Paris, because every self-respecting American foodie would never find herself eating anywhere in Paris without first checking with the good Ms. Wells. This often results in the mass descending of American food tourists on places she favored. Walking through the door of La Regalade these days feels like one has just been magically transported to Manhattan."
The blogger took solace in one enduring reality: "My Pudlo is still only available in French. When a translated version is published, then I will really scream."
Well, scream your head off, darling. It's here: the first-ever English language edition of Gilles Pudlowski's voluminous-yet-handy guide to 1,000 Paris restaurants, 300 wine bars, tea shops, cafes and several hundred gourmet groceries. He gives awards: best chef of the year, international restaurant of the year, young chef of the year, bistro of the year --- even best hostess of the year. He lists new restaurants, with ratings (one to three "plates") and prices. He summarizes the "best" restaurants. He collects restaurants that are the "best value for the money." And he smartly organizes this mass of information and opinion by collecting restaurants in arrondisements, with informative short essays at the beginning of each one.
Gilles Pudlowski is not just a critic. In that French way, he's a public intellectual: a historian of regional French cooking, a novelist, cookbook author. As a foodie, he's a bit limited; he seems to be obsessed with "produce". And he ends almost every mini-review the same way, with praise for the restaurant's wine list. Still, if you're off to Paris --- or, given the exchange rate, of a mind to read and dream about Paris --- this is the book to buy.
Not Zagat?
Not Zagat, except as a handy --- because it's alphabetical --- backup.
And for a very simple reason: Zagat tells you what tens of thousands of unknown people liked, Pudlo is one man's opinion. Okay, with a little help --- he uses "twenty or so professional and amateur researchers." Still, I think my point holds: You do better dealing with one, reasonably consistent point-of-view than with a legion of unknowns.
Pudlo's point-of-view comes across as one of sensible optimism. He finds this a very good time: "Paris has never provided us with as many new opportunities to celebrate at reasonable prices." [Looking at those prices, you may conclude there was a problem in the translation here.] His chef of the year is female. And he has a knack for suggesting restaurants you've never heard of in a way that makes you want to go immediately.
The quickest way to test a critic is to compare his impressions of restaurants you know well with your take on those establishments. I was with him on Le Caveau du Palais, an old favorite on the Place Dauphine: "There is not a single false note..." Yes, Vaudeville is "the archetypal Parisian brasserie." I thought there was much more to say about Benoit than to recite the menu and note that it now takes Visa. I found Bofinger overrated; Pudlo wrote around the subject, avoiding a negative opinion. He raved about the view at Georges, on the roof of the Pompidou Center --- well, duh. He nailed L'Orangerie for its devotion to "chic little suppers." Amen. His enthusiasm for Rotisserie du Beaujolais could not equal mine; I forgive him. He overpraises the fading Vietnamese classic, Tan Dinh, and fails to include the outrageously great Cambodian restaurant, Au Coin des Gourmets --- for shame. And he has a weakness for killer expensive, big name restaurants that I don't share.
No matter. Reading Pudlo is to be in a conversation. I thrilled when he turned sour: Maxim's customers are "in search of a culinary museum." And it's great to hear a voice that's a monotone for most of the book break out in wild praise. The Mori Venice Bar "will convince you that the Grand Canal is to be found in the heart of Paris." Helene Darroze "looms over the Parisian culinary stage alongside all those she formerly admired." And he finds the food at the Jules Verne --- the Eiffel Tower restaurant I recall as an overpriced tourist trap --- so great that he could almost "step over the balustrade and take to the air." Nice touches, all.
Pudlo --- don't leave home without him.
