HACCP & Sanitation in Restaurants and Food Service Operations: A Practical Guide Based on the USDA Food Code With Companion CD-ROM Review

HACCP and Sanitation in Restaurants and Food Service Operations: A Practical Guide Based on the USDA Food Code With Companion CD-ROM
Average Reviews:

HACCP is the acronym for Hazard Analysis of Critical Control Points. This text, by Arduser and Brown is the be all and end all on the topic - in my view. It even comes with a companion CD-ROM that contains all forms from the book in Adobe Acrobat (PDF) and MS Word format. This is a major time saver when it comes to preparing and administering the required tests to staff members and the newly hired.
The comprehensive 530+ page text covers everything I can think of that relates to food safety in restaurants and other eateries. It is designed to teach food service managers and their employees the specifics of food safety in accordance with the FDA Food Code. This excellent training manual is in large print format that makes it easy to read. The writing is easy to understand and the authors were careful to explain key concepts and terms so that even a novice can study it alone.
The seven comprehensive chapters in the manual cover the following topics: Hazards to Food Safety; Factors Affecting Food-Born Illness; Food Safety Regulations; Following The Flow of Food; HACCP; and the Facility Plan. These are followed by an extremely helpful Glossary of terms. The Appendix includes all forms needed to meet the FDA requirements and to run an efficient and safe establishment. Included are checklists, signage, compliance checklists, and equipment cleaning charts, allergen-control program worksheet along with job descriptions for personnel. There is even a Certificate of Completion to certify that staff members have taken and passed the required tests (included).
With the rise in reports of food-borne illnesses and deaths it is essential that every food service operation adhere to the regulations and safety procedures at all times. In my view, this book is essential to ensure you are in total compliance.
As one who has conducted training I find this book deserves 5 stars for its complete coverage of the subject matter in an easy to digest all-in-one format. I highly recommend this book.

Everything Guide To Starting And Running A Restaurant: Secrets to a Successful Business (Everything: Business and Personal Finance) Review

Everything Guide To Starting And Running A Restaurant: Secrets to a Successful Business (Everything: Business and Personal Finance)
Average Reviews:

I bought this book at Barnes and Noble and must say that I liked the layout and that it is easy to read. It has a lot of information in it, although I would have liked to have more referrals to other sources of information as well. This book gives you a great bit of motivation to finally stop thinking about an own business but doing it. I would recommend it to everyone who hasn't yet decided if or if not. Other than that it is not meant to be your guideline to opening your own restaurant since it doesn't give you enough information.
Pros: Easy to read, gives motivation, examples to determine costs, tips and hints to help you out, very well structured.
Cons: Doesn't give enough information on each chapter, doesn't refer enough to other information sources.
It still has been nice to read this book and very interesting.

Dirty Dishes: A Restaurateur's Story of Passion, Pain, and Pasta Review

Dirty Dishes: A Restaurateur's Story of Passion, Pain, and Pasta
Average Reviews:

Having enjoyed many of Pino Luongo's restaurants -- Il Cantonori, Le Madri, Coco Pazzo, Tuscan Square, and Centolire -- it's a delight to meet the man behind the menus. The story is one of success and failure and more success. It seems particularly timely for New Yorkers -- that someone would start with nothing (Luongo immigrated to NY from Italy without so much as a word of English) build an empire (16 restaurants at one point!) and come to realize that the simple things are life's greatest rewards. Whether you love to cook, eat or simply read --- you will enjoy this story.

Setting the Table Low Price CD: The Transforming Power of Hospitality in Business Review

Setting the Table Low Price CD: The Transforming Power of Hospitality in Business

I listened to this CD on my drive to and from work. As a person with a long career in the hospitality business in NC, I was already aware of some of Meyer's success. However, it was an unexpected treat for the senses the hear all the scrumptious details that has gone into the creation of USHG. Meyer's story 'reads' like well blended Bordeaux; part Gourmet Magazine, part business how-to, and part New Yorker Magazine. It is a wonderful peak behind the curtain of a not only the famous Union Square Cafe, but also Meyer's other restaurants and ventures where USHG hospitality and customer loyalty is legendary. Few companies have enjoyed the longstanding successes that Meyer's has created and nurtured. Setting the Table is an inspiring read for anyone interested in what it takes to achieve true business excellence.

Danny Meyer started Union Square Cafe when he was 27, with a good idea and scant experience. He is now the CEO of one of the world's most dynamic restaurant organizations that includes eleven unique dining establishments—and each is at the top of its game. How has he done it? How has he consistently beaten the odds in one of the toughest trades around?

In this landmark book, Danny shares the lessons he's learned while developing the winning recipe for doing business he calls "Enlightened Hospitality." This innovative business philosophy emphasizes putting the power of hospitality to work in a new and counterintuitive way: The first and most important application of hospitality is to the people who work for you, and, in descending order of priority, the guests, the community, suppliers, and investors. This way of setting priorities stands the more traditional business models on their head, but Danny considers it the foundation of every success he, and his restaurants, have had.

Full of behind-the-scenes history on the creation of Danny's most famous restaurants, and the anecdotes, advice and lessons he has accumulated on his long and ecstatic journey to the top of the American restaurant scene, Setting the Table is a treasure trove of innovative insights that are applicable to any business or organization.

Unless you are in the restaurant industry, comprehending what it takes to be successful is quite difficult. Certainly there is a need to run an operation profitably, and that in itself can be a monumental task, but before profit comes a focused, well run kitchen. When it operates efficently, watching a kitchen in the heat of service can be very similar to focusing on an orchestra under the direction of a competent conductor. When it operates poorly, the kitchen resembles a cross between Dante's Inferno and the gates of hell.
A well built team of serious culinary professionals, focused on food and service will always lead to a financially successful business. At the head of this team you will always find a confident, well-versed, competent, compassionate, quality driven leader.
Chef Carroll, a highly accomplished culinarian shows us how he has been able to make his mark as one of the finest cooks in the country while systematically running some of the finest clubs in America.

On the Line Review

On the Line
Average Reviews:

(More customer reviews)
ATTENTION: if you are a big fan of 30 Minute Meals or Semi-homemade Cooking, this is not a book for you. If you only go to chain restaurants that call each location a "store," this is not a book for you. If you're the sort of person for whom food is akin to fuel and you don't view eating as an aesthetic experience, this is not a book for you.
Who IS this book for, then?
1) Armchair chefs
Fans of inside-the-restaurant-business books, such as Kitchen Confidential (Bourdain) and The Soul of a Chef (Ruhlman), will enjoy reading about the history and personalities behind Le Bernardin. On The Line is written in a very matter of fact style though, so don't expect anything like the gonzo rants of Bourdain or the hushed and reverential tone of Ruhlman.
2) Anybody interested in how a top-end restaurant operates
Most of On The Line is devoted to an in-depth discussion of the daily operations at Le Bernardin. Comprehensive descriptions of each kitchen station, detailed run downs of how dishes are prepared during service, and a fascinating overview of the business side are highlights of the book. And unlike most books written by chefs, the focus is on the entire restaurant staff, not just the chef, which helps reinforce how running a restaurant is truly a team effort.
3) Accomplished or ambitious home cooks
While On The Line includes a selection of recipes, they are aspirational in that they are scaled down renditions of highly refined and luxurious restaurant cooking. As in The French Laundry Cookbook, one needs access to premium ingredients and a solid repertoire of cooking skills to replicate the dishes successfully.
Bottom line: On The Line is a fascinating and realistic look into the world of running a top restaurant, with the bonus of recipes for actual dishes served at Le Bernardin. Don't expect any flashy writing or chef worship talk though. Four stars, with the caveat that this isn't a book for beginning cooks or those who don't enjoy eating at destination restaurants.
------
Complementary books:
Garlic and Sapphires (Reichl)--the high end restaurant experience from a restaurant reviewer's perspective.
Down and Out in Paris and London (Orwell)--a funny and shocking exposé of what really goes on in hotel and restaurant kitchens, but NOT from the chef's point of view!

Fast Food, Fast Track: Immigrants, Big Business, And The American Dream Review

Fast Food, Fast Track: Immigrants, Big Business, And The American Dream
Average Reviews:

(More customer reviews)
Sociologist Jennifer Parker Talwar spent four years working in a Burger King as a part of her research on this book. She interviewed a wide range of immigrant fast-food workers in New York City's ethnic communities. The result is an interesting study in immigration, ethnicity, labor and community in New York City.
As a white American who has worked in fast food before, I was surprised to read about just how much is going on with fast food restaurants in a major metropolis, both in terms of the labor side and the business side. My experience was archtypal middle America - the kid working to make extra money. I think that this description still applies for the vast majority of the country, but the more I think about the faces behind the counter of many fast food restaurants in Washington, DC, Talwar is right - fast food is the entry for many immigrants into the mainstream American workforce. Accordingly, this book is a must-read for those who want to consider how immigrants are assimilated into modern America.
The main limitation is that it is a study of immigrant labor and fast food in New York City. The broad range of ethnic diversity and community experiences that were drawn upon for this book simply do not exist anywhere else in the United States. I cannot think of any other city that could readily provide the "United Nations" workforce of the Chinatwon McDonald's described in this book. Therefore, how applicable Talwar's work is to the country at large must be called into question. Also, do not be fooled by the cover into thinking that this book is anything like "Fast Food Nation." It is a specific (and appropriately narrow) sociological study, and lacks the range of that excellent book.

The Restaurant Manager's Success Chronicles: Insider Secrets and Techniques Food Service Managers Use Every Day to Make Millions
Average Reviews:

The Restaurant Manager's Success Chronicles has the right idea. Success stories help you figure out what works without going through the trial and error process yourself, saving you time and money. There are a lot of good tips and advice in the book, but you do have to do some searching to find them. There is also a lot of miscellaneous information that could have been left out.
I like the success stories, but wish there would have been more specifics about the restaurants - how big are they? How much money do they make? How many are on their wait staff? How long have they been in business? Some of these questions are answered, but again you've got to search for the answer.
The employee sections are a great start to finding and rewarding staff. I would have liked a bit more information on budgeting and customer relations. All-in-all, the Restaurant Manager's Success Chronicles will give you an idea of how some successful managers have gotten to where they are now.
