To manage cold food preparation in a creative fashion is what Garde Manger is all about. The basics and skills needed to handle the station can flow through into the home kitchen as well if you follow along in this book. For the professional this book will be a way to refine your skills in Catering, Banquet service and general foodservice operations. For the home cook this book will open your eyes to the wonderful world of Garde Manger and help you develop skills that will assist in your home cooking and possibly moving into a professional setting.
The book is broken down into 18 chapters, starting with the Garde Manger Profession and finishing with Buffets and Food Bars. You will learn the very basics of production and follow through with design, plating and adding condiments and decor to round out the recipe. The different levels and expectations of cold food are laid out quite well in Chapter one and certainly leave no stone unturned. If you are a novice in the kitchen you may want to study the book a bit first to pick up the terminology so you can better prepare yourself for what's ahead.
The recipes and methods for preparation are easy to follow and include step by step instructions with pictures and diagrams. If you take the time to look over the recipe before you begin then you have mastered the first rule of the kitchen. Read everything and set your station or area up with the needed ingredients and kitchen tools to get the job done. Once you work through the first selected recipes you will gain a measure of satisfaction and accomplishment that will carry your through the book.
I've enjoyed reading through the book and have utilized several recipes in my professional kitchen as well as adapting them a bit to my home kitchen. I look forward to utilizing these recipes to enhance my cold food preparation skills and as well as giving me some new ideas in cold food production. This book certainly deserves a nice spot on my culinary shelf and I'm sure you will enjoy it as well.

Let me qualify this by saying for a number of years I taught Garde Manger at a Le Cordon Bleu school. I probably own every text book on the subject as it has remained near and dear to my heart as I moved back to the restaurant world.
This is probably the BEST text on this subject I have seen; so much so that I plan to look into their other books. Running the gamut from cold appetizers to a primer on ice sculpting to a discussion of centerpiece carving, this book provides clear concise examples of each process. The full color pictures are fantastic and a welcome addition to the instructions provided. If I was teaching again, this would be my textbook of choice.

This book is outstanding! A must-have for every kitchen regardless of how experienced a cook you are. I attended the full time 6-month culinary program at the FCI a few years ago and this is almost verbatim our first quarter (6 week) curriculum. We then spent the next 3 quarters refining and practicing and expanding on all these techniques. If you don't want to sacrifice 6 months and $50,000 (an endless cuts and burns and bad hair days) to attend cooking school, then buy this book and cook every recipe over and over and you will become an excellent cook. If you master all the skills and techniques in the book, you can walk into any kitchen and hold your own as this is the foundation of classic cooking and the language of the kitchen.
Hints and tips from the Deans and Chef Instructors pepper the book for every technique with tidbits such as "...cook beans at a constant low temperature and cool them in their cooking liquid. ~ Dean Alain Sailhac" or "Do not cover a chicken after roasting or it will steam and make the meat taste reheated." ~Dean Jacques Pepin". It's like getting a personal cooking lesson from the greatest chefs of our time. The book teaches the 250 foundation techniques including stocks, sauces, soups, salads, eggs, potatoes, poultry, beef, veal, lamb, pork, fish, shellfish, marinades, stuffings, organ meats (my least favorite day in cooking school!), pastry dough, creams & custards, crepes, brioche, frozen desserts, meringues, mousses, and soufflés (my favorite day in cooking school! :)
It also explains in great detail terms in a kitchen, names of equipment and pots and pans, food safety, knifes and knife skills, and professional kitchen management. If you want to become an outstanding home cook or are considering or about to attend cooking school, I strongly recommend devouring (pun intended) this book. If you learn this book, or at least become familiar with all the techniques, then you will be leaps and bounds ahead of the game. Bon courage et bon appetit!

I first learned of Professional Cooking when a friend borrowed the second edition from a friend who's a chef. As soon as I saw it, I had to have it.Any serious cook - amateur or pro - should enjoy this tome. It does what most cookbooks written for the home never get around to: it explains the 'whys' behind the 'how-tos.' Why use egg yolks in sauces and dressings? Why do sugar and onions both (separately) caramelize? Why is baking soda a terrible thing to do to an innocent vegetable?The recipes in this book (designed as exercises for cooking students) are for 15-30 portions. Most, however, can be scaled down to family size. Anyway, each is designed to teach a point or technique, and is great reading even if you never actually make it.This book is easy to follow. Gisslen doesn't get wrapped up in jargon - no small feat in a book written for professionals. If you love to cook, buy it.Benjamin F. Harvill

`Emeril's Delmonico' by (nominally) the poster boy of celebrity chefs, Emeril Lagasse, is a very nice celebrity chef cookbook. It is certainly more appealing to me than the last three of Emeril's books I have reviewed, and even better than the only one of Lagasse's books, `From Emeril's Kitchens' to which I gave five stars.
Since I have so many different cookbooks, it often takes but one recipe in a new book to turn on my interest. That recipe in this book is the one for turtle soup. I have been pouring over soup cookbooks for months looking for a good turtle soup recipe, but there are none to be found. Even better, Emeril has given us a source for turtle meat and no warnings about these beasts being on any endangered species list, so I suspect the turtle meat source is from farm raised turtles.
My discovering that recipe put me in a good frame of mind to look kindly on this book and once I was settled in, I was pretty happy with what I saw.
For starters, there is a brief history of the Delmonico's restaurant name and its various incarnations in both New York City, where the Delmonico family opened the original restaurant in the 1820's. Yes, that is over 180 years ago! The New Orleans Delmonicos founders have no family connection to the New York restaurant, although the New Orleans founders did ask for and receive permission to use the famous New York restaurant's name. The family that has owned and run the New Orleans Delmonico's sold their name and location to Emeril Lagasse's company in 1997. Emeril reopened the restaurant under his name in 1998, with many recipes carried over from the earlier owners' regime, created by chefs employed by the earlier owners.
In a nutshell, the cuisine at Emeril's Delmonico as represented in this book is a high end synthesis of local Cajun and Creole dishes with fine dining dishes made famous by great restaurants of the past in New York, New Orleans, and other famous dishes such as, for example, the Caesar salad from Tijuana, Mexico. While this is food for `high end' dining, it is not really the same as what you would expect to find from `haute cuisine' shops such as those of Thomas Keller, Charlie Trotter, Alan Ducasse, or Daniel Boulud. The good news here is that while many dishes require a lot of ingredients, some of which may be a bit unfamiliar to the average amateur chef, they should almost always be easy to find, with the possible exception of that elusive turtle meat and crawfish, which I have never seen in the flesh here in the darkest Lehigh Valley, even at our high end megamart.
One very easy way I had to gauge the quality of the recipes was to look at Emeril's recipe for Caesar Salad. It is actually almost identical to my very favorite method from Mark Bittman's `How to Cook Everything', including the use of a coddled egg and anchovies in the dressing. Emeril even goes Bittman one better by writing it up in such a way that the Caesar dressing can be made in advance, necessary for restaurant use. My only concern is that Emeril puts a bit of raw, chopped garlic in the dressing rather than rubbing the cut garlic on the salad bowl. I have made Caesar salad with raw garlic and if one is not very careful, it can be just a bit too strong a bite for some people.
Many of these recipes have lots of different ingredients, which involves a lot of prep work. The recipe for hearty vegetable soup, for example, calls for sixteen (16) ingredients, nine (9) of which require peeling and chopping. Surprisingly, one of the ingredients is a commercially prepared chicken base, even though the book gives recipes for at least two different chicken stocks. The plus side of this picture is that the instructions for making this soup are extremely simple. And, this is pretty true of most recipes in this book. And, while you need some good basic kitchen skills and equipment, you don't need a CIA degree to make these dishes. One of my family's favorite dishes is fried oysters, and Emeril gives us a very nice and simple recipe which should be easy, as long as you know your way around a deep frying rig, whether it be a high end fryolator, a Fry Daddy, or a Dutch oven plus thermometer. This is important, because Emeril doesn't give us the tutorial on making the oil deep enough and gives no more details than to state the temperature of the frying oil, letting it up to us to realize you will need a candy / deep frying thermometer.
Before I had the epiphany over finding the turtle soup recipe, it seemed to me that Emeril was being just a bit excessive in putting in all the recipes for staples such as mayonnaise, but I changed my mind. Even if you don't use them, at least it tells you that at Emeril's Delmonico, they make their own mayonnaise, and here is how they do it. On the other hand, I was more than casually interested in seeing Emeril's own recipe for Worcester sauce. This is probably not something you want to make on a regular basis, unless you happen to be opening `Joe's Delmonico' in New Hope, but if you wanted to entertain and really aim to impress, this is one way to do it.
Emeril, unlike some other celebrity cookbook authors such as Rachael Ray, is someone whose books you have to examine one by one, because he covers so many genres, but this one I recommend to everyone who cooks, especially to anyone with more than a passing interest in old school New York / New Orleans restaurant dining.

I had several problems with this book. As a travel guide to inns and B&Bs across the country, it is well organized and informative. But as a book that purports to deliver the "best" in country inn cooking, it leaves a bit to be desired.
Instead of gathering recipes and actually publishing the best ones they found (which would have resulted in a richly varied selection of dishes of consistently good quality), the authors seem to have selected the inns first, then published a handful of each inn's best offerings. This results in a jumble of recipes that veer wildly from haute cuisine challenging to "open-a-can" basic, throwing together in a very unsatisfying manner recipes based mostly on convenience foods with recipes designed to creatively showcase fresh local ingredients. And since the book is organized by STATE, instead of by grouping the recipes together logically by type, if you want to see, for example, all of the redundant muffin recipes (LOTS of duplication here), you must look in the index in the back of the book and seek them out, state by state, one page at a time.
I also find the cover design of this book to be a tad misleading. While the gorgeously constructed dish that is pictured on the front cover may well be found somewhere in this book, it shares space with recipes that offer no more deliberation than "open a few cans, stir everything together, serve it in a casserole dish". If you are attracted to this volume because it appears to offer elegance and innovation as the cover is certainly attempting to suggest, you will be disappointed.
In summary, I didn't like this book because it is difficult to browse, offers recipes of inconsistent quality, and has a habit of mentioning ingredients and techniques that may be unfamiliar to many home cooks, without offering further explanation. In short, it is not a well-organized and informative cooking book.
HOWEVER, as a random collection of recipes, it might turn out to be just dandy. With a purported 1500 to choose from, each of us are bound to find a handful of treasures that are well-suited to the way we like to cook and eat, regardless of experience or skill level. Just be prepared to have to sieve through pages and pages of things you think are uninteresting before you can find those gems.

This is the book that i used when i was at college in my home city in england.Patisserie is a professional book for students, Bakers,Chefs,Confectioners and Teachers.Patisserie is a craft/trade (some say it's an art) so housewives may find it a little confusing,for example, Bread making is a technology and carn't be learnt from a book. If you have a basic understanding in Fermented goods,pastry,confectionary hot and cold sweets and cake decorating then you will love this book. The book covers everything i needed to complete my studies of Bakery,cake decorating and patisserie and i still use it in my work.Hanneman himself was a lecturer in charge of the bakery school at the Cambridge College of Arts and Technology as well as head of food at lancaster and Morecambe college and also a former chief examiner for the 711-01 pastry cooks and patissiers exam.

This book is more of a detailed textbook than a cookbook. It goes into a detailed history of how sauces developed over the last few centuries - dating all the way back to the Roman feasts. Better yet, it doesn't give mere recipes - it details the hows and whys of good sauce making.
This book may be too detailed for an amateur cook to use. It's not the sort of book that you simply take a recipe and use, not unless you're already well-skilled in the saucier's art. It does take the time to explain all the french cookery terms that make up the vocabulary of the text, and if you're willing to actually take the time to learn all the skills Chef Laurousse is teaching, you'll be a far better chef for it.

I am in culinary school and this is the required text for our classes. After hours of researching online, and even taking the time to call the publisher, I finally decided to take a risk by buying this "Trade" version rather than the "College Version," offered here on Amazon and in our school's bookstore. Rest assured! This book is EXACTLY the same as the "College Version," but it doesn't include the CulinarE Companion CD (which our school does not utilize anyway)! I even had the instructors at school ask the publisher about the differences, and they admitted that there are none! All of the recipes and page numbers match up identically. Save yourself the $36+ dollars and buy this version instead of getting ripped off by a marketing scam to get more money out of students by calling a book the "College Version" - I'm glad I did!
We are just getting into the book, so I can't offer too much of an opinion, but from what I've seen so far, I'm impressed! I just wanted to add my review so that hopefully another student like myself can save some money. I hope it helps!

Francisco Migoya has done it again, a wonderful book on a variety of pastries, entremets(cakes), savories, and more. It is divided into sections of business such as the pastry shop, bakery, etc. Mainly made for commercial use with servings of 6 cakes to 20 individual portions and special supplies. There are some mistakes in the components of some recipes such as 12 cake layers instead of 2 but if you read through the recipe first you'll be prepared. Overall it is nice but geared toward larger sizes and specialized machines so it might not be suited for the avid home baker but a good book.

This is actually the third edition of this work. In 1979, Gutman took the plunge with the simply titled "American Diner" published in hardback by Harper & Row. Done in collaboration with Elliott Kaufman and David Slovic, it was shorter and more loosely organized than the later edition, but a nice and welcome diner book at a time when there still weren't many such books around. In 1993 Gutman came out with "American Diner, Then and Now" which sported revised and substantially enlarged text and better-integrated photos (the Kaufman photo portfolios had also been dropped). This revamped '93 version was a high-water mark for diner books, a now numerous field. With it's perfect balance between individual diner stories ("dinerlore"), photos, and history, and great attention to detail which bespeaks a real love of the subject, this has been an unofficial bible for diner afficionados for the last 7 years.
Now here is the 2000 edition, published in paperback by Johns Hopkins (apparently Barry Levinson's hometown has more interest in diners than the folks at Harper). This is basically just a reprint of the 1993 edition, with a different cover, a new introduction, and a few names added to the diner index at the end. While on the one hand it's great that this modern classic is available again (it had been out of print for several years) I had hoped that there would be some new material in it. To be sure, this book still teaches you how to tell a Paramount from a Mountain View, or a Fodero from a Worcester Lunch Car, and makes a fine gift (Christmas or otherwise) for someone who doesn't have the '93 edition. Nevertheless, at the risk of sounding like an ingrate, I would have to say I slightly prefer the '93 edition, mainly because the cover photo, an interior shot of a restored Worcester Lunch Car, with all that luscious wood, is more attractive than the rather bland shot of Ford's Diner that graces the cover of the 2000 edition. But make no mistake, if you don't have any diner books and are looking for a good one, this is THE one to get----and if you've already got five other diner books, you should still get this, as it has the clearest explication of American diner history you're ever likely to read.

This is a book that is designed to be a text book for baking. While recipes are measured in both English and Metric, they are primarily measured by weight, not volume. Also many of the proportions are not for the home, but for industrial use. The book covers many areas of baking by going delving into ingredients, and their special characteristics. There is an almost 40 page primer on baking specifics such as yeast, temperatures you want you kitchen to be for rising of breads and much more. If you are looking for information about is about baking in general this book would more than serve you well as it covers so much, but its primary use would be best suited for a professional kitchen.
