I knew nothing about the Caribbean. I bought this book, read it carefully, selected a resort based on Showker's nitpicky and thorough information, and had a great time with NO major surprises. Not only is it a tremendously helpful and trustworthy guide, it's fun to read. I read it whenever I feel the need to escape, if only in fantasy, from cold, grey New England winters.

Savory Sweets : From Ingredients to Plated Desserts Review

Savory Sweets : From Ingredients to Plated Desserts

The textbook used by the advance culinary pastry class @ Johnson & Wales University. Study in flavor profiles and "notes" in relation to the tongue and tasting synthesis. Extremely useful for professionals and hardcore foodies alike. Flavor pairings are very helpful in developing your own ideas. Solid basic formulas a must have. Once again, this book reads more like a textbook, with photos and illustrated pictures. Highly recommended.

A new approach to flavor, ingredients, and techniques
"From a simple idea, Amy Felder has practically conceived a new category of dessert ideation. And her instructional skills, honed in classroom kitchens, allow her to convey this knowledge in a clear, systematic, and inspirational fashion."--Peter Reinhart, author of The Bread Baker's Apprentice and The Whole Grain Revival: Mastering the Art of Whole Grain Breads
Traditionally, pastry chefs have worked mainly with a sweet flavor palette, leaving savory tastes and techniques to their culinary colleagues. Today, fusion cuisine promises new blends of the savory and sweet. For pastry chefs, this means a new world of flavor opportunities--as well as the need to integrate them into dynamic dishes and cooking practice.
The pastry chef's key to the culinary side of the kitchen, Savory Sweets offers a complete, systematic discussion of flavor, techniques, and ingredients, then puts the discussion into practice using specific plated desserts. Author, chef, and acclaimed teacher Amy Felder brings together the culinary and pastry realms, giving students and professional chefs a new, up-to-date approach to flavor. Though the book comes from a baking perspective, culinary chefs will also find the discussion of savory flavors and fusion cuisine extremely useful.
Savory Sweets is divided into four parts:
Vocabulary starts with a scientific explanation of taste, then establishes concepts of flavor and overall plate profile
Culinary Skills looks at cooking methods other than baking and what they have to offer plated desserts; these techniques include sauce work and manipulation of texture
Ingredients examines an assortment of vegetables, herbs, spices, dairy products, and dry pantry products with regard to flavor and partner flavors for each ingredient; plated dishes showcasing each ingredient are also provided
Plated Desserts applies the information from the previous three sections in the form of eight specific desserts, each with its individual personality, plate and flavor profiles, theme, and integration of pastry and culinary practice; recipes for all of the plates' components are included

Filled with helpful figures and brilliant color photographs, Savory Sweets offers advanced baking students a unique, sophisticated, and practical classroom text, while also providing professional chefs and culinary students with an organized and detailed approach to flavor.

I am in culinary school and this is the required text for our classes. After hours of researching online, and even taking the time to call the publisher, I finally decided to take a risk by buying this "Trade" version rather than the "College Version," offered here on Amazon and in our school's bookstore. Rest assured! This book is EXACTLY the same as the "College Version," but it doesn't include the CulinarE Companion CD (which our school does not utilize anyway)! I even had the instructors at school ask the publisher about the differences, and they admitted that there are none! All of the recipes and page numbers match up identically. Save yourself the $36+ dollars and buy this version instead of getting ripped off by a marketing scam to get more money out of students by calling a book the "College Version" - I'm glad I did!
We are just getting into the book, so I can't offer too much of an opinion, but from what I've seen so far, I'm impressed! I just wanted to add my review so that hopefully another student like myself can save some money. I hope it helps!

Professional Baking (Trade) Review

Professional Baking (Trade)
Average Reviews:

This is a book that is designed to be a text book for baking. While recipes are measured in both English and Metric, they are primarily measured by weight, not volume. Also many of the proportions are not for the home, but for industrial use. The book covers many areas of baking by going delving into ingredients, and their special characteristics. There is an almost 40 page primer on baking specifics such as yeast, temperatures you want you kitchen to be for rising of breads and much more. If you are looking for information about is about baking in general this book would more than serve you well as it covers so much, but its primary use would be best suited for a professional kitchen.

The Professional Chef Review

I have been cooking for quite some time now, and I am always digging for newer and better recipes and even different variations. This book had much more than I had ever thought that it would. It has a chapter dedicated to nutrition, kitchen safety, equipment, and all sorts of examples as well as photo's for everything, including cuts of meats, fish, poultry, etc.
It also thoroughly covers all sorts of food preparation, and the recipes!!! The recipes look just wonderful. It covers everything from simple broths, breads, sandwiches to different types of pastry. It is a great book for the beginner, as well as the experienced cook.
I have already tried a few of the recipes, and they are truely wonderful, and have been well tested. I would highly recommend this book to anyone who loves to cook and bake..
One word of caution... Most of the recipes are geared to cooking of large quantities, for 10 portions or better. Breads for 8-10 loaves, and so on, so be prepared to modify your quantities.

Knife Skills Illustrated: A User's Manual Review

Knife Skills Illustrated: A User's Manual
Average Reviews:

(More customer reviews)
`Knife Skills Illustrated' by cooking instructor, Peter Hertzmann, is eminently subtitled, `A User's Manual', as one could wish that such a book actually accompanied your one thousand dollar plus set of French, German, or Japanese knife sets, except that Professor Hertzmann makes the excellent case, along with almost everyone else who covers the subject, that you only really need three knife styles, the chef's knife, a pruning knife, and a serrated slicing knife.
Before buying this book, one must consider another volume, `The Professional Chef's Knife Kit' prepared by The Culinary Institute of America. The book has only 3/5 the pages of Hertzmann's volume, and costs five more dollars, list price, but it actually covers far more ground and may actually be preferable to Hertzmann if you already know your way around a chef's knife and cutting board.
Hertzmann's book is truly for the inexperienced amateur, in that he covers only the most basic techniques; however, he does this very, very well. Two aspects of the book may leave the professional or skilled amateur a bit impatient. The first is that all techniques are fully illustrated from the point of view of both a right-handed and a left-handed person. Thus, a lion's share of the book's 256 pages duplicate information. The second is that the sections on preparing vegetables often repeat the same techniques for produce where the methods are very similar, as with an onion and a shallot or a turnip and a potato.
This said, all the instruction Hertzmann gives us is very, very good. Coverage includes all the usual subjects, such as how to hone a knife, how to wash and store knives, how to use, wash, and care for cutting boards, and how to hold and handle knives safely. I may have been just a bit disappointed that the author did not cover knife sharpening in more detail, but I firmly agree with the author (and many others as well) that with expensive knives, this task is best done by a good professional. I am also just a bit surprised that Hertzmann does not give just a bit more attention to use of the Santoku design knife and the Chinese and Japanese style vegetable cleavers, especially as the author points out that his first real training was with Martin Yan, and that he used the Oriental style cleaver for many years before switching over to the European style chef's knife.
Even though much of the material is familiar to an experienced cook, I found a few tips which were so good to virtually be worth the cost of the book. High on that list is the better method for finding the best point on asparagus to cut off the woody ends. As I have often thought, the test snap method really wastes much good vegetable. Another rare and valuable piece of advice is the three different methods for dicing an onion, one of which is especially useful if you don't need to dice the entire vegetable.
In contrast, the CIA Knife Kit book goes far beyond Hertzmann in dealing with both far more different types of cuts such as rondelles, ripple cuts, gaufrettes, ribbons, Paysanne, Tourne, Fermiere and decorative cuts. The book also covers using a mandoline in great detail and gives far more detailed descriptions and photographs on techniques for washing, storing, and honing knives. And, most importantly, if you are willing to do it, precise information on how to sharpen knives using a whetstone. There is a fair amount of information in this book which an amateur may never use, but all of it is useful to both a professional and an amateur who is simply interested in how the professional does things. It is also important to point out that the material in this book does not appear in the big CIA book `The New Professional Chef'.
This book is perfect for the person who simply wants to be able to make Rachael Ray recipes in almost 30 minutes (Rachael can do it simply because she has all these skills). It is also a boon to people who like to cook efficiently, but don't know where to find these basic skills (and doesn't have the time to watch the collected 256 episodes of Alton Brown's `Good Eats' show. If you already have good knife skills, consider the CIA book instead.

The Unofficial Guide to Las Vegas 2010 (Unofficial Guides) Review

The Unofficial Guide to Las Vegas 2010 (Unofficial Guides)
Average Reviews:

(More customer reviews)
I purchased this along with Fodor's Las Vegas 2010 and Frommer's Las Vegas 2010. This book has the most pages. They break down everything in terms of a rating, price, etc. for shows they tell you the slowest time of the week for the show, the length of the show, as well as a description. It breaks down the top restaurants and buffets.
This book has information regarding shows, hotels, restaurants, nightlife. There are little tips here and there but none i found that i didn't already really know.
What I don't like is that there are no pictures--and there are very few visual breaks for me so sometimes the pages can be a bit overwhelming. I loved the Fodor's book the best for layout and pictures as well as side trip information.
The difficulty in rating is that there are some things I like about Fodor's better and it gives better information and some things I like about this one better--this one has more information about buffets--which kind of excite me. I'm wondering if the only thing i will be doing is eating!
After looking at Fodors and this book over and over, it really has become more of a tie for me between the two. Frommers on the other hand is clearly not on par with either of these books and provides the least amount of information on everything.
If you are only looking to be in Las Vegas, then this is probably the best book. If however, you are like me and also wanting to do day trips or side trips, I would also purchase Fodor's Guide to Las Vegas 2010 as it has a lot more information about those. (63 pages on side trips--as opposed to 6 pages in this book).
I hope this help you make a decision on which book is best.
I learned from this book about the "M" casino that has an excellent buffet for fairly inexpensive. it is a little south of the strip so a lot of people don't know about. so far, it is our favorite buffet. although we will be going to Wynn soon because they are suppose to have an excellent buffet also.
I highly recommend buying and reading at least 1 of these guides--this or fodor's as there is so much information that you may not find out if you just come.

I read this book, along with "Casino Operations Management" by Kilby, Fox, and Lucas. Both books were EXTREMELY helpful. They both start by assuming you know nothing about the gaming industry. They then show you the history and the evolution of the industry and then take you under the covers to show you the hows and whys of casino management and its decisions. I would HIGHLY recommend both books to anyone looking to gain insight into this fascinating industry.

The Bluffs, Bay Head, New Jersey - The Story of a Hotel at the Jersey Shore

This is a beautiful book. As a member of a family that summered at Bay Head in the late '50's and early 60's, it brought back a host of memories. The summer culture at "the shore" was truly represented.
I enjoyed all the small copies of the Bluffs Hotel trivia. It was fun to read. I only wish I had been older when we summered there, so I could have seen the Bluffs in it's hayday.

Standing on a high dune overlooking the sandy beach and Atlantic Ocean, The Bluffs of Bay Head, New Jersey was one of the last great, old Jersey Shore resort hotels. For more than a century, this Victorian landmark was the summer destination for the affluent from Philadelphia, New York, and New Jersey as well as the year-round meeting place for the "locals." Francine LaVance Robertshaw began summering in Bay Head as a child in the mid-1950s, eventually moving there in 1967. She worked at The Bluffs from 1979 through 1986, first as a desk clerk and then as assistant to Kathleen Johnson Spies, manager and daughter of owners Alfred E. (Sonny) and Martha Johnson. This is Francine Robertshaw's inside story of The Bluffs. Through her research, interviews, experiences, photographs, and documents, you will meet the owners as well as many of the employees, hotel guests, and bar patrons who made The Bluffs unique and charming over the decades. You'll meet the "regulars" and the "eccentrics" and be taken inside The Bluff's social scene as well as behind the scenes of the hotel and bar, including details of how it functioned as a business. Rarely has there been a book that has documented in such detail the story of a hotel. This beautifully-crafted volume contains more than three hundred historic photographs, documents, and facsimile reproductions as well as more than a dozen paintings by artists Dick LaBonte, Ludlow Thorston, Robert Loder Jr., Al Barker, M. E. Whitehill, Rodell C. Johnson, Gerard Rutgers Hardenbergh, and E. J. Meeker. The book is divided into three chapters: The Hotel, The Bar, and The Memories (written by dozens of Bluffshotel guests, bar patrons, and employees), plus an Appendix of documents that includes twenty pull-out facsimile reproductions featuring a 1936 map of the area, a circa 1910 Bluffs booklet brochure, historic restaurant and bar menus, hotel rate schedules, vintage postcards, and more. The Bluffs is gone forever but held in the hearts of many who had the privilege to cross its threshold. This unique book will transport the reader back into its world, preserving The Bluff--and a now lost way of life at the Jersey Shore--in memory and for generations to come. Our heirloom editions are beautifully printed and bound, with many features not found in most books... Oversized (9 1/4" x 12 1/4") to enhance the reading and viewing experience. Features 20 pull-out facsimile reproductions of historic documents. Luxurious embossed kidskin Kivar 7 case. Precious gold type and accents are stamped on the cover and spine, adding distinctive, classic beauty. Superbly printed on archival quality, acid-neutral paper that will not yellow with time. Sturdy hand-sewn binding (Smyth-sewn), inspected at every stage, ensuring strength and durability throughout the years. Bound in satin ribbon bookmark

Hotel Design, Planning, and Development, New Edition Review

Hotel Design, Planning, and Development, New Edition
Average Reviews:

WOW! I have a copy of the 1980s version of Rutes and Penner--this is a totally new edition, all new photography, etc.--and consider it the 'Bible' for hotel design. But the new edition is twice as big and full of current examples and information. It has 32 pages of gorgeous color photos of great hotels and resorts from around the world. The text is in three main sections: Hotel Types (downtown, resorts, conference centers, luxury hotels, casino hotels, etc.); Design Guide (planning and design information for all areas of the hotel); and Development Guide (feasibility, programming, future trends). In addition, there are lots of appendices and sidebars from such people as Ian Schrager, I.M. Pei, Robert Stern, and John Portman. I've looked at other hotel design books in the stores and there isn't anything that is so complete or current. There are other books on boutique hotels, with lots of pictures, but nothing with this global coverage of all types of lodging properties. With well over 400 pages, this book will be the new Bible for hotel design. I can't imagine a better choice for anyone involved with the hotel development, architecture, or interior design.
