Cooking Dirty: A Story of Life, Sex, Love and Death in the Kitchen Review

Cooking Dirty: A Story of Life, Sex, Love and Death in the Kitchen
Average Reviews:

(More customer reviews)
If ever you've worked in a restaurant, you know Jason Sheehan. You probably didn't work with him, but you worked with any of the tens of thousands of chefs, cooks, and other assorted prep staff cut from a similar cloth: efficiently crass, utterly obnoxious and thoroughly proficient in the kitchen. One day they were your best friend, the next you were the butt of their jokes. You hated them, but somehow manage to think fondly of them all these years later.
I relived lost memories of a few short years working in the front of the restaurant as I devoured "Cooking Dirty." I'd always wanted to be one of the kitchen guys, with that nonchalant cool that comes from too many hours of chain smoking, heavy drinking, excessive heat, sleep deprivation, and rampant womanizing. This book was pure rebellious adventure, allowing me the chance to sneak back into the Clorox-tinged scents and bright lights of the restaurant, engage in a bit of chicanery, and then return home none the messier for it. It was culinary voyeurism. I got to be on the inside, if only for a brief time.
The stories are both engaging and entertaining. Sheehan's life goes through a tumult of highs and lows, and he seems better for it all. I'm disappointed at the expected yet misplaced references to Bourdain. I'm a fan of Anthony, but Jason Sheehan's work is at once more pure and grittier. This is a chef's chef, a man's man, and a storyteller of the highest grade. I look forward to future volumes, and hope that the life of celebrity chef doesn't dull Sheehan's obvious wit or his passion for the kitchen!

The Blue Heron Ranch Cookbook, based on Cooking Off the Grid, also by Nadia Natali, blends 126 tasty, healthful recipes with lively tales of the Natali family’s adventures living close to the land—in the wilds of California’s Los Padres National Forest. Nadia Natali's varied dishes, suitable for any group or family, are presented in a simple style that makes them both visually appealing and effortless, as a sequence of ingredients that correspond to numbered directions. Each chapter opens with a vivid account of the family’s trials and triumphs at Blue Heron Ranch, followed by a particular category of recipes, arranged in seven groupings. Whimsical illustrations adorn the recipes and embellish the sometimes poignant, often hilarious stories about raising a family in the wilderness, running a meditation center, and facing nature’s seemingly endless challenges—with the Blue Heron Ranch kitchen being the center around which these events unfold. Recipes include Blue Heron Ranch Potato Leek Soup, Saturday Market Quiche, Miso Pine Salmon, Ojai Bouillabaisse, Early Morning Rice Cream, Aunt Ev’s Cardamom Bundt Cake, and Honey Almond Chai. The Blue Heron Ranch Cookbook offers culinary and spiritual sustenance to anyone who wants to experience, or revisit, the pleasures of comforting, communal meals at Zen and other retreat centers.

Soffritto: A Delicious Ligurian Memoir Review

Soffritto: A Delicious Ligurian Memoir

This is wonderful personal history of a Ligurian native who grew up in the restaurant trade and left after falling in love with an Austrailian girl to open an acclaimed restaurant in Sydney. The book is full of personal details and notes on restaurants in the region. In the back there is a largish group of recipes that look excellent. I've eaten some of the foods of the region (my favorite is testaroli with pesto) and think you will enjoy making these recipes. There is also interesting details about the effects of WWII on this region. Recommended!

This narrative traces Lucio on his mission to understand his family, the food, and the culture that prepared him to create the delicious menus in his restaurant, thousands of miles away from his birthplace and family. Full of tales from farmers, fishermen, war heroes, winemakers, waiters, hunters, cooks, cousins, aunts, shepherds, and scholars, this portrait of a journey explores the ingredients that make a life.

Trail of Flame Review

Trail of Flame
Average Reviews:

(More customer reviews)
You think you like it hot? Then hit the Trail, where you'll find restaurants, bars, and cafes that specialize in the kind of food that makes Mount St. Helens look cool. Some are culinary shrines, but most are undiscovered gems, ranging from a biker bar in upstate New York to the kind of holes-in-the-wall where cooks use spices by the handful, not the teaspoon measure.
Follow the Trail to a bar in the Adirondacks (accessible only by snowmobile in the winter) where the Armageddon wings will leave you speechless. To a Rastafarian joint in Tampa where the chef whacks pumpkins from the vine with a machete to make pumpkin soup. To an elegant restaurant in Santa Fe that serves heavenly chili rellenos. To a lip-tingling Sri Lankan restaurant in Minneapolis, or to one of the best Vietnamese restaurants in the country (hint: it's in Miami's Little Havana).
More than just a restaurant guide, Trail of Flame is also a celebration of the "culture of hot" and where to find it - at festivals, chili cookoffs, stores, "Hotter-Than-Hell nights" ... even in cyberspace.
Follow Jennifer Trainer Thompson on this cultural and culinary trip through the world and underworld of hot and spicy foods. Her frank, funny reviews and stories will get you revved up to hit the Trail. But a word of caution: just reading it may make you break into a sweat.

The textbook used by the advance culinary pastry class @ Johnson & Wales University. Study in flavor profiles and "notes" in relation to the tongue and tasting synthesis. Extremely useful for professionals and hardcore foodies alike. Flavor pairings are very helpful in developing your own ideas. Solid basic formulas a must have. Once again, this book reads more like a textbook, with photos and illustrated pictures. Highly recommended.

A new approach to flavor, ingredients, and techniques
"From a simple idea, Amy Felder has practically conceived a new category of dessert ideation. And her instructional skills, honed in classroom kitchens, allow her to convey this knowledge in a clear, systematic, and inspirational fashion."--Peter Reinhart, author of The Bread Baker's Apprentice and The Whole Grain Revival: Mastering the Art of Whole Grain Breads
Traditionally, pastry chefs have worked mainly with a sweet flavor palette, leaving savory tastes and techniques to their culinary colleagues. Today, fusion cuisine promises new blends of the savory and sweet. For pastry chefs, this means a new world of flavor opportunities--as well as the need to integrate them into dynamic dishes and cooking practice.
The pastry chef's key to the culinary side of the kitchen, Savory Sweets offers a complete, systematic discussion of flavor, techniques, and ingredients, then puts the discussion into practice using specific plated desserts. Author, chef, and acclaimed teacher Amy Felder brings together the culinary and pastry realms, giving students and professional chefs a new, up-to-date approach to flavor. Though the book comes from a baking perspective, culinary chefs will also find the discussion of savory flavors and fusion cuisine extremely useful.
Savory Sweets is divided into four parts:
Vocabulary starts with a scientific explanation of taste, then establishes concepts of flavor and overall plate profile
Culinary Skills looks at cooking methods other than baking and what they have to offer plated desserts; these techniques include sauce work and manipulation of texture
Ingredients examines an assortment of vegetables, herbs, spices, dairy products, and dry pantry products with regard to flavor and partner flavors for each ingredient; plated dishes showcasing each ingredient are also provided
Plated Desserts applies the information from the previous three sections in the form of eight specific desserts, each with its individual personality, plate and flavor profiles, theme, and integration of pastry and culinary practice; recipes for all of the plates' components are included

Filled with helpful figures and brilliant color photographs, Savory Sweets offers advanced baking students a unique, sophisticated, and practical classroom text, while also providing professional chefs and culinary students with an organized and detailed approach to flavor.

Alice Waters and Chez Panisse Review

Alice Waters and Chez Panisse
Average Reviews:

(More customer reviews)
I've just finished this book and I have to say that it had more in it than I had bargained for when I first picked it up. I knew I wanted to read the story about America's most famous, most influential, and arguably most "important" restaurant, but I was delightfully surprised by two other things about it. First thing, I've never read a story laid out quite like this - the narrative voices (it's kind of an oral history of Chez Panisse but that doesn't really do this book justice) overlap, blend, and harmonize with each other, and that of the writer Thomas McNamee, in a seamless fashion which sweeps the reader along in a way I've never before experienced. Second, I had no real understanding of the value and values of the work of Alice Waters & crew, and how important they are in 21st century America. To take this restaurant from its beginnings as a kind of Mickey-and-Judy "Let's put on a Restaurant" venture all the way through the culinary flowering of our nation in the 80's, 90's and 00's, and to be a leader of the pack the entire time, is quite a feat for Alice. And to end up with her labors on behalf of Slow Food, environmental education, and responsible sustainability... well it's a path I wish more people would travel. Bravo and toques off to Alice Waters, all the staff who have worked at Chez Panisse over the years, and mostly to Thomas McNamee and his publisher who bring us this story which is at once a delight to read and a good message for us to hear.

The Fundamental Techniques of Classic Cuisine Review

The Fundamental Techniques of Classic Cuisine
Average Reviews:

(More customer reviews)
This book is outstanding! A must-have for every kitchen regardless of how experienced a cook you are. I attended the full time 6-month culinary program at the FCI a few years ago and this is almost verbatim our first quarter (6 week) curriculum. We then spent the next 3 quarters refining and practicing and expanding on all these techniques. If you don't want to sacrifice 6 months and $50,000 (an endless cuts and burns and bad hair days) to attend cooking school, then buy this book and cook every recipe over and over and you will become an excellent cook. If you master all the skills and techniques in the book, you can walk into any kitchen and hold your own as this is the foundation of classic cooking and the language of the kitchen.
Hints and tips from the Deans and Chef Instructors pepper the book for every technique with tidbits such as "...cook beans at a constant low temperature and cool them in their cooking liquid. ~ Dean Alain Sailhac" or "Do not cover a chicken after roasting or it will steam and make the meat taste reheated." ~Dean Jacques Pepin". It's like getting a personal cooking lesson from the greatest chefs of our time. The book teaches the 250 foundation techniques including stocks, sauces, soups, salads, eggs, potatoes, poultry, beef, veal, lamb, pork, fish, shellfish, marinades, stuffings, organ meats (my least favorite day in cooking school!), pastry dough, creams & custards, crepes, brioche, frozen desserts, meringues, mousses, and soufflés (my favorite day in cooking school! :)
It also explains in great detail terms in a kitchen, names of equipment and pots and pans, food safety, knifes and knife skills, and professional kitchen management. If you want to become an outstanding home cook or are considering or about to attend cooking school, I strongly recommend devouring (pun intended) this book. If you learn this book, or at least become familiar with all the techniques, then you will be leaps and bounds ahead of the game. Bon courage et bon appetit!

In 1984, Dorothy Cann Hamilton founded The French Culinary Institute with a singular vision: She wanted to create a culinary school that combined classic French techniques with American inventiveness in a fast-paced curriculum. Since then, the FCI has gone on to become one of the most prestigious culinary schools in the world, boasting a list of alumni that includes the likes of Matthew Kenney and Bobby Flay and a faculty of such luminaries as Jacques Pepin, Andrea Immer, and Jacques Torres. But perhaps the greatest achievement of the FCI is its Total Immersionsm curriculum, in which the classes prepare a student to cook in any type of kitchen for any kind of cuisine. Now, for the first time ever, all the best that the FCI has to offer can be found in a single sumptuous volume. The Fundamental Techniques of Classic Cuisine presents the six- and nine-week courses taught at the FCI that cover all 250 basic techniques of French cooking. Along with more than 650 full-color photographs, the book features more than 200 classic recipes as well as new recipes developed by some of the school's most famous graduates. Complete with insider tips and invaluable advice from the FCI, this will be an indispensable addition to the library of serious home cooks everywhere.

I first learned of Professional Cooking when a friend borrowed the second edition from a friend who's a chef. As soon as I saw it, I had to have it.Any serious cook - amateur or pro - should enjoy this tome. It does what most cookbooks written for the home never get around to: it explains the 'whys' behind the 'how-tos.' Why use egg yolks in sauces and dressings? Why do sugar and onions both (separately) caramelize? Why is baking soda a terrible thing to do to an innocent vegetable? The recipes in this book (designed as exercises for cooking students) are for 15-30 portions. Most, however, can be scaled down to family size. Anyway, each is designed to teach a point or technique, and is great reading even if you never actually make it.This book is easy to follow. Gisslen doesn't get wrapped up in jargon - no small feat in a book written for professionals. If you love to cook, buy it.Benjamin F. Harvill

Having enjoyed many of Pino Luongo's restaurants -- Il Cantonori, Le Madri, Coco Pazzo, Tuscan Square, and Centolire -- it's a delight to meet the man behind the menus. The story is one of success and failure and more success. It seems particularly timely for New Yorkers -- that someone would start with nothing (Luongo immigrated to NY from Italy without so much as a word of English) build an empire (16 restaurants at one point!) and come to realize that the simple things are life's greatest rewards. Whether you love to cook, eat or simply read --- you will enjoy this story.

Emeril's Delmonico: A Restaurant with a Past Review

Emeril's Delmonico: A Restaurant with a Past
Average Reviews:

(More customer reviews)
`Emeril's Delmonico' by (nominally) the poster boy of celebrity chefs, Emeril Lagasse, is a very nice celebrity chef cookbook. It is certainly more appealing to me than the last three of Emeril's books I have reviewed, and even better than the only one of Lagasse's books, `From Emeril's Kitchens' to which I gave five stars.
Since I have so many different cookbooks, it often takes but one recipe in a new book to turn on my interest. That recipe in this book is the one for turtle soup. I have been pouring over soup cookbooks for months looking for a good turtle soup recipe, but there are none to be found. Even better, Emeril has given us a source for turtle meat and no warnings about these beasts being on any endangered species list, so I suspect the turtle meat source is from farm raised turtles.
My discovering that recipe put me in a good frame of mind to look kindly on this book and once I was settled in, I was pretty happy with what I saw.
For starters, there is a brief history of the Delmonico's restaurant name and its various incarnations in both New York City, where the Delmonico family opened the original restaurant in the 1820's. Yes, that is over 180 years ago! The New Orleans Delmonicos founders have no family connection to the New York restaurant, although the New Orleans founders did ask for and receive permission to use the famous New York restaurant's name. The family that has owned and run the New Orleans Delmonico's sold their name and location to Emeril Lagasse's company in 1997. Emeril reopened the restaurant under his name in 1998, with many recipes carried over from the earlier owners' regime, created by chefs employed by the earlier owners.
In a nutshell, the cuisine at Emeril's Delmonico as represented in this book is a high end synthesis of local Cajun and Creole dishes with fine dining dishes made famous by great restaurants of the past in New York, New Orleans, and other famous dishes such as, for example, the Caesar salad from Tijuana, Mexico. While this is food for `high end' dining, it is not really the same as what you would expect to find from `haute cuisine' shops such as those of Thomas Keller, Charlie Trotter, Alan Ducasse, or Daniel Boulud. The good news here is that while many dishes require a lot of ingredients, some of which may be a bit unfamiliar to the average amateur chef, they should almost always be easy to find, with the possible exception of that elusive turtle meat and crawfish, which I have never seen in the flesh here in the darkest Lehigh Valley, even at our high end megamart.
One very easy way I had to gauge the quality of the recipes was to look at Emeril's recipe for Caesar Salad. It is actually almost identical to my very favorite method from Mark Bittman's `How to Cook Everything', including the use of a coddled egg and anchovies in the dressing. Emeril even goes Bittman one better by writing it up in such a way that the Caesar dressing can be made in advance, necessary for restaurant use. My only concern is that Emeril puts a bit of raw, chopped garlic in the dressing rather than rubbing the cut garlic on the salad bowl. I have made Caesar salad with raw garlic and if one is not very careful, it can be just a bit too strong a bite for some people.
Many of these recipes have lots of different ingredients, which involves a lot of prep work. The recipe for hearty vegetable soup, for example, calls for sixteen (16) ingredients, nine (9) of which require peeling and chopping. Surprisingly, one of the ingredients is a commercially prepared chicken base, even though the book gives recipes for at least two different chicken stocks. The plus side of this picture is that the instructions for making this soup are extremely simple. And, this is pretty true of most recipes in this book. And, while you need some good basic kitchen skills and equipment, you don't need a CIA degree to make these dishes. One of my family's favorite dishes is fried oysters, and Emeril gives us a very nice and simple recipe which should be easy, as long as you know your way around a deep frying rig, whether it be a high end fryolator, a Fry Daddy, or a Dutch oven plus thermometer. This is important, because Emeril doesn't give us the tutorial on making the oil deep enough and gives no more details than to state the temperature of the frying oil, letting it up to us to realize you will need a candy / deep frying thermometer.
Before I had the epiphany over finding the turtle soup recipe, it seemed to me that Emeril was being just a bit excessive in putting in all the recipes for staples such as mayonnaise, but I changed my mind. Even if you don't use them, at least it tells you that at Emeril's Delmonico, they make their own mayonnaise, and here is how they do it. On the other hand, I was more than casually interested in seeing Emeril's own recipe for Worcester sauce. This is probably not something you want to make on a regular basis, unless you happen to be opening `Joe's Delmonico' in New Hope, but if you wanted to entertain and really aim to impress, this is one way to do it.
Emeril, unlike some other celebrity cookbook authors such as Rachael Ray, is someone whose books you have to examine one by one, because he covers so many genres, but this one I recommend to everyone who cooks, especially to anyone with more than a passing interest in old school New York / New Orleans restaurant dining.

According to the U.S. Department of Labor one of the fastest growing segments of the food service business is providing professional personal chef services. Personal chefs can expect to make between $100 and $400 a day every day. Until recently having a chef prepare food for you and your family was considered a luxury for only the wealthy. Today, many individuals and families have discovered that a personal chef service is an affordable, timesaving, and healthy alternative to the stress and time constraints of working to put a wholesome, economical, and tasty meal on the table every night. A personal chef offers a professional service of meal preparation. A client's individual tastes drive the creation of their customized menu. These personalized meals are prepared either in the client s home or your catering kitchen and then packaged, labeled, possibly delivered, and stored in the refrigerator or freezer. Most services include complete grocery shopping, customized menu planning, and storage in oven/microwavable containers. Families in which both spouses work, singles and couples who work long, hard hours, seniors who would rather not or cannot cook anymore, gourmets who love to cook but who do not always have the time, and individuals that have medical conditions, such as wheat/gluten intolerance, milk or other sensitivities, diabetes, or high blood pressure, who require specialized meals will seek your services. This book will not teach you how to cook, although there are some sample menus. What you will learn is all the aspects of starting your business, pricing your products, marketing your business, and conducting your day-to-day business operations. This comprehensive new book will show you step-by-step how to set up, operate, and manage a financially successful personal chef business. The author has left no stone unturned in explaining the risky business of food service. The book covers the entire process of a personal chef business from startup to ongoing management in an easy to understand way, pointing out methods to increase your chances of success and showing you how to avoid the common mistakes that can doom a startup. The new companion CD-ROM contains all the forms used in the book in PDF format for easy use, as well as a detailed business plan, which will help you precisely define your business, identify your goals, and serve as your firm's resume. The basic components include a current and pro forma balance sheet, an income statement, and a cash flow analysis. While providing detailed instructions and examples, the author leads you through finding a location that will bring success (in your home or a rented kitchen), managing and training employees, accounting and bookkeeping procedures, auditing, successful budgeting, and profit planning development, as well as thousands of great tips and useful guidelines. You also will learn how to draw up a winning business plan, how to set up computer systems to save time and money, how to hire and keep a qualified staff, how to generate high profile public relations, and how to keep bringing customers back. In addition, you will become familiar with basic cost control systems, profitable menu planning, successful kitchen management, equipment layout and planning, food safety and Hazard Analysis Critical Control Point (HACCP), low cost marketing ideas, and low and no cost ways to satisfy customers and build sales. This new book covers everything that many companies pay consultants thousands of dollars for. PCRs, as those in the business are nicknamed, will appreciate this valuable resource and reference it in their daily activities as a source for ready-to-use forms, Web sites, operating and cost cutting ideas, and mathematical formulas that can be easily applied to their operations.

This was my textbook in culinary school for garde manger class, and it covers all the essentials from sausage making, cold salads, and hot hors d'oeuvres to platter design, edible and nonedible garnishes and decorations, and classical buffet presentations. It may not be suitable for the casual cook, but as a professional guide to the garde manger, it is very thorough.

I was a little disappointed to see that the first 100 pages or so is a basic primer on starting a business. There are better books for that, my favorite is Small Time Operator. The rest of the text is more of what you would expect, but I think it could go much more in depth. I would like to see the author leave the basic business info, such as whether to incorporate, run as a sole proprietor, etc., to other books and expound on the daily issues of a personal chef. All in all a good basic primer, but I think something more is needed for someone really considering starting a business in this field.
