I am using your textbook for a class I teach for the Oklahoma City/County Health Department. I Love It! The class I teach is the Food Service Operator's Certification Course that is required by all food service operators in this county. I am a Registered Dietitian who is contracted by Oklahoma State University-OKC and Francis Tuttle to teach the class for the health department. It is kind of a community service offered by the two schools. I have only been teaching the class for three years now, and by far your book is the best.
Your book has made my job so easy and so much fun! Some of my students are returning to do the re-certification class and bringing managers in who have not taken the class in 20 years. In the past, they have just challenged the test every three years, because they thought the class was too boring. (and they knew it all).
I would highly recommend this book to educators in the nutrition field. I think all nutrition majors need to know this important information. I also recommend it for a reference for my food service managers in my nursing homes and assisted living facilities.

This book is applicable to anyone with tons of cash to spare on a party hosted in 1954. As a caterer, I was looking for inspiration, but sadly, only found jello and marshmallow themes pervasive throughout the entire book. Not worth the paper it is printed on!

To manage cold food preparation in a creative fashion is what Garde Manger is all about. The basics and skills needed to handle the station can flow through into the home kitchen as well if you follow along in this book. For the professional this book will be a way to refine your skills in Catering, Banquet service and general foodservice operations. For the home cook this book will open your eyes to the wonderful world of Garde Manger and help you develop skills that will assist in your home cooking and possibly moving into a professional setting.
The book is broken down into 18 chapters, starting with the Garde Manger Profession and finishing with Buffets and Food Bars. You will learn the very basics of production and follow through with design, plating and adding condiments and decor to round out the recipe. The different levels and expectations of cold food are laid out quite well in Chapter one and certainly leave no stone unturned. If you are a novice in the kitchen you may want to study the book a bit first to pick up the terminology so you can better prepare yourself for what's ahead.
The recipes and methods for preparation are easy to follow and include step by step instructions with pictures and diagrams. If you take the time to look over the recipe before you begin then you have mastered the first rule of the kitchen. Read everything and set your station or area up with the needed ingredients and kitchen tools to get the job done. Once you work through the first selected recipes you will gain a measure of satisfaction and accomplishment that will carry your through the book.
I've enjoyed reading through the book and have utilized several recipes in my professional kitchen as well as adapting them a bit to my home kitchen. I look forward to utilizing these recipes to enhance my cold food preparation skills and as well as giving me some new ideas in cold food production. This book certainly deserves a nice spot on my culinary shelf and I'm sure you will enjoy it as well.

Let me qualify this by saying for a number of years I taught Garde Manger at a Le Cordon Bleu school. I probably own every text book on the subject as it has remained near and dear to my heart as I moved back to the restaurant world.
This is probably the BEST text on this subject I have seen; so much so that I plan to look into their other books. Running the gamut from cold appetizers to a primer on ice sculpting to a discussion of centerpiece carving, this book provides clear concise examples of each process. The full color pictures are fantastic and a welcome addition to the instructions provided. If I was teaching again, this would be my textbook of choice.

This book is outstanding! A must-have for every kitchen regardless of how experienced a cook you are. I attended the full time 6-month culinary program at the FCI a few years ago and this is almost verbatim our first quarter (6 week) curriculum. We then spent the next 3 quarters refining and practicing and expanding on all these techniques. If you don't want to sacrifice 6 months and $50,000 (an endless cuts and burns and bad hair days) to attend cooking school, then buy this book and cook every recipe over and over and you will become an excellent cook. If you master all the skills and techniques in the book, you can walk into any kitchen and hold your own as this is the foundation of classic cooking and the language of the kitchen.
Hints and tips from the Deans and Chef Instructors pepper the book for every technique with tidbits such as "...cook beans at a constant low temperature and cool them in their cooking liquid. ~ Dean Alain Sailhac" or "Do not cover a chicken after roasting or it will steam and make the meat taste reheated." ~Dean Jacques Pepin". It's like getting a personal cooking lesson from the greatest chefs of our time. The book teaches the 250 foundation techniques including stocks, sauces, soups, salads, eggs, potatoes, poultry, beef, veal, lamb, pork, fish, shellfish, marinades, stuffings, organ meats (my least favorite day in cooking school!), pastry dough, creams & custards, crepes, brioche, frozen desserts, meringues, mousses, and soufflés (my favorite day in cooking school! :)
It also explains in great detail terms in a kitchen, names of equipment and pots and pans, food safety, knifes and knife skills, and professional kitchen management. If you want to become an outstanding home cook or are considering or about to attend cooking school, I strongly recommend devouring (pun intended) this book. If you learn this book, or at least become familiar with all the techniques, then you will be leaps and bounds ahead of the game. Bon courage et bon appetit!

Easy to read and concise, but at times I requested input from the instructor to clarify and expand on information especially the accounting methods. AS a professional of 10 years now(currently working with Wolfgang Puck), this book should be a must read before you commit to being a chef.
It gives a realistic look into what working in the high end kitchens in the World is REALLY like.(The long hours, heat, working sick, tempers,low pay, etc.) What you see on cooking shows is staged and is not a indication of the day to day grind that a kitchen hits you with. Most people have NO IDEA what they are getting themselves into!
I suggest to anyone who is considering taking on the challenge of earning the title "Professional Chef"-REad this book, get a job in kitchen before you spend money on cooking school to see if you like it, and ask yourself-do you love food, or do you just think it would be a glory filled way to fame?

This is a pretty remarkable collection of recipes. If you are foodservice pro, this book ought to be on your shelf. For the homecook, it can be useful, but with a couple of reservations.
This book has more GM recipes in one place in one book than the rest of my professional cookbooks combined. If you need a recipe, you will probably find it here. It has stuff like: galantines, chaud-froid, homemade cheese, curing your own meat, and a very useful section on aspic and gelatin, and another one on buffet presentations (especially handy if you have never worked one before).
The format is also quite nice. In the TOC, it lists every recipe, so no flipping through pages or trying to decode the index to find a recipe (would that more cookbooks do this). The beginning of each chapter has a really useful section on various techniques. Sadly, these are closer to a master class rather than a beginner's lesson.
For the home cook, much here is useful. Certainly you should be able to use stuff like vinaigrettes, salads, sandwiches, and maybe even fresh grind sausages. However, there is much here you should avoid, and you need to be able to distinguish which is which. Also, the recipes are terse, professional ones, and there is no explanatory material about tips or suggestions or anything else.

If this was published as a 15-page pamphlet I would give it 5 stars. However its not worth the $10.20 Amazon is selling it for. While nominally 200 pages, 1/2 the facing pages just have a simple illustration on them. On the pages that DO have printing, its usually just a paragraph or list of items centered on a page. And the pages are about the size of a large postcard. So while this book *does* have useful info and tips in it, I think of it more as a pamphlet in book form rather than a real book. Picked up for $2-5 it might be worth it, but I think its overpriced at $10.

ATTENTION: if you are a big fan of 30 Minute Meals or Semi-homemade Cooking, this is not a book for you. If you only go to chain restaurants that call each location a "store," this is not a book for you. If you're the sort of person for whom food is akin to fuel and you don't view eating as an aesthetic experience, this is not a book for you.
Who IS this book for, then?
1) Armchair chefs
Fans of inside-the-restaurant-business books, such as Kitchen Confidential (Bourdain) and The Soul of a Chef (Ruhlman), will enjoy reading about the history and personalities behind Le Bernardin. On The Line is written in a very matter of fact style though, so don't expect anything like the gonzo rants of Bourdain or the hushed and reverential tone of Ruhlman.
2) Anybody interested in how a top-end restaurant operates
Most of On The Line is devoted to an in-depth discussion of the daily operations at Le Bernardin. Comprehensive descriptions of each kitchen station, detailed run downs of how dishes are prepared during service, and a fascinating overview of the business side are highlights of the book. And unlike most books written by chefs, the focus is on the entire restaurant staff, not just the chef, which helps reinforce how running a restaurant is truly a team effort.
3) Accomplished or ambitious home cooks
While On The Line includes a selection of recipes, they are aspirational in that they are scaled down renditions of highly refined and luxurious restaurant cooking. As in The French Laundry Cookbook, one needs access to premium ingredients and a solid repertoire of cooking skills to replicate the dishes successfully.
Bottom line: On The Line is a fascinating and realistic look into the world of running a top restaurant, with the bonus of recipes for actual dishes served at Le Bernardin. Don't expect any flashy writing or chef worship talk though. Four stars, with the caveat that this isn't a book for beginning cooks or those who don't enjoy eating at destination restaurants.

I'm a culinary student and found this book very helpful for converting units into metric units. It helped me with my baking class because it showed how to convert measurements properly and with great accuracy. I also used the following to study for the National Servsafe Test which is also on amazon.com:
Study Guide for the National Servsafe Exam: Key Review Questions and Answers with Explanations (ISBN: 0971999678). It showed me the type of questions asked on the exam. In addition, was quite helpful for my sanitation class. Get both books if you're in culinary school.

`Knife Skills Illustrated' by cooking instructor, Peter Hertzmann, is eminently subtitled, `A User's Manual', as one could wish that such a book actually accompanied your one thousand dollar plus set of French, German, or Japanese knife sets, except that Professor Hertzmann makes the excellent case, along with almost everyone else who covers the subject, that you only really need three knife styles, the chef's knife, a pruning knife, and a serrated slicing knife.
Before buying this book, one must consider another volume, `The Professional Chef's Knife Kit' prepared by The Culinary Institute of America. The book has only 3/5 the pages of Hertzmann's volume, and costs five more dollars, list price, but it actually covers far more ground and may actually be preferable to Hertzmann if you already know your way around a chef's knife and cutting board.
Hertzmann's book is truly for the inexperienced amateur, in that he covers only the most basic techniques; however, he does this very, very well. Two aspects of the book may leave the professional or skilled amateur a bit impatient. The first is that all techniques are fully illustrated from the point of view of both a right-handed and a left-handed person. Thus, a lion's share of the book's 256 pages duplicate information. The second is that the sections on preparing vegetables often repeat the same techniques for produce where the methods are very similar, as with an onion and a shallot or a turnip and a potato.
This said, all the instruction Hertzmann gives us is very, very good. Coverage includes all the usual subjects, such as how to hone a knife, how to wash and store knives, how to use, wash, and care for cutting boards, and how to hold and handle knives safely. I may have been just a bit disappointed that the author did not cover knife sharpening in more detail, but I firmly agree with the author (and many others as well) that with expensive knives, this task is best done by a good professional. I am also just a bit surprised that Hertzmann does not give just a bit more attention to use of the Santoku design knife and the Chinese and Japanese style vegetable cleavers, especially as the author points out that his first real training was with Martin Yan, and that he used the Oriental style cleaver for many years before switching over to the European style chef's knife.
Even though much of the material is familiar to an experienced cook, I found a few tips which were so good to virtually be worth the cost of the book. High on that list is the better method for finding the best point on asparagus to cut off the woody ends. As I have often thought, the test snap method really wastes much good vegetable. Another rare and valuable piece of advice is the three different methods for dicing an onion, one of which is especially useful if you don't need to dice the entire vegetable.
In contrast, the CIA Knife Kit book goes far beyond Hertzmann in dealing with both far more different types of cuts such as rondelles, ripple cuts, gaufrettes, ribbons, Paysanne, Tourne, Fermiere and decorative cuts. The book also covers using a mandoline in great detail and gives far more detailed descriptions and photographs on techniques for washing, storing, and honing knives. And, most importantly, if you are willing to do it, precise information on how to sharpen knives using a whetstone. There is a fair amount of information in this book which an amateur may never use, but all of it is useful to both a professional and an amateur who is simply interested in how the professional does things. It is also important to point out that the material in this book does not appear in the big CIA book `The New Professional Chef'.
This book is perfect for the person who simply wants to be able to make Rachael Ray recipes in almost 30 minutes (Rachael can do it simply because she has all these skills). It is also a boon to people who like to cook efficiently, but don't know where to find these basic skills (and doesn't have the time to watch the collected 256 episodes of Alton Brown's `Good Eats' show. If you already have good knife skills, consider the CIA book instead.

The content of the book is OK it is comprehensive and delivers basic information. I do not care for the recipes embedded in the instructional portion of the chapters I find it a bit of a distraction. I was disappointed to find that the publisher has changed the quality of the construction of the hard cover book the paper in the 5th edition and the binding are of a lesser quality than the 4th edition and the DVD is no longer included in the price of the book.

I started a bakery/deli in 1993 using a professional baker and this book as my foundation. In time I also learned to use advice from my customers and from other pros. Still, the whole lot of the experts, save one, gave less useful information than did this classic by Joseph Amendola.
Theories of dough fermentation and the like are of especial importance for any new baker. When something goes wrong, too, this book has a good trouble-shooting section.
I heartily recommend this book to any baker, commercial or men and women trying to please their loved ones.
Other books you should add to the shelf are Professional Baking and Quantity Cooking.
