I have five years of Hospitality Marketing/CVB experience; I have been out of the business two years and this is an excellent refresher course.

(More customer reviews)This huge book is an excellent resource for location a B&B and is packed with over 900 delicious, time-tested recipes. From family favorites to international delights this book as something for everyone.
A vast array of recipes include French toast, pancakes, crepes, eggs, breads, cereals, cookies, cakes, pies, salads, soups, sauces, & beverages. Appetizers, fruits, vegetables, & main dishes are included as well.
Recipes are arranged by state and then by B&B. There is a brief description of each B&B along with contact information and one to four recipes. The index lists recipes both by title & food type making things easy to find.
Some of my favorite recipes include sourdough cinnamon waffles, cheese soda bread & orange fluff beverage. I also enjoyed the green chilies soufflé. My dinner guests loved . chicken casserole & the buttermilk pecan pie.

each B&B has a brief description as well as a list of rates, amenities, bed sizes, number of rooms, innkeepers' names, and meals included and offered. even after you use the certificate, it is a valuable resource for deciding where to spend your next retreat.

In this book, the authors cover the good and bad in the B&B trade, creating a thorough understanding for those interested in running their own B&B. Topics include: finances, business licenses and inspections, customer service, advertising and promotion, and much more. The "sweet" recipes at the beginning of each chapter, are an added bonus. The Great Country Inns of America Cookbook: More Than 400 Recipes from Morning Meals to Midnight Snacks, Fourth Edition Review

(More customer reviews)The high point of this book is absolutely the flavor. The tomato pie is a sheer delight, although it was rather messy to serve when fresh (it had a tendency to fall apart). The peach cobbler certainly highlighted the best of that summer fruit. The zucchini breakfast meal is surprisingly flavorful given the short list of simple ingredients. All in all, flavor and appearance are the shining best aspects of Great Country Inns. You'll be proud to serve these recipes to your own guests, and there's no need to tell them how simple most of these recipes are---let them think you slaved over a hot stove!
Normally a lack of photos doesn't bother me, although it's a tad unusual in a book that's all about food oriented towards guests, special occasions, and so on; I don't think they're needed here in most cases because the recipes are pretty simple, but some readers might prefer them.
I did find some of the directions a bit ambiguous. For example, there's a casserole that involves "blending" a mixture of eggs and dairy with chopped & cooked potato, then baking. There's no indication whether blending means stirring or actual blending with a mixer, which would result in a very different texture and result. We decided to go with stirring and the result came out well, so I'll assume that's what the recipe meant. These ambiguities seem relatively few, however, so I wouldn't worry too much about them.
My only other negative is, like the photos, very reader- and occasion-dependent. Like most restaurant food, these recipes tend to use huge amounts of butter to improve flavor. The peach cobbler leftovers had a puddle of congealed butter in them after refrigeration---the recipe used so much that some of it separated back out again. This isn't a problem if you aren't concerned about healthy eating or bring out this cookbook only on special occasions, but I thought it deserved a mention in case it's a concern for you.
Overall this is a wonderful cookbook, well worth exploring in your kitchen. The vast range of recipes is impressive and delicious, and surprisingly easy to make.

IT failed to really go into depth about the business aspects which I thought was a shame. This book is great if you are already running a B&B or want to decorate your house like one, but I would suggest buying several other B&B books to help give the complete picture. It also include recipies which was an added bonus. A good book for the right need.

The book is divided into different regions of France, beautifully illustrating both the exteriors with their stunning views as well as the interiors of these places. One learns some information about the current owners of these charming dwellings. For each residence, there is a list of places to visit recommended by the owners. At the back of the book there is useful information on each chateau or manor such as the address, phone number, fax number, and often email address and website. This is a great travel aid for someone who planning a special vacation in rural France. Great decorating ideas too!

The author has compiled a vital, step-by-step guideline with everything one needs to or should know about the business. I particularly appreciated the personal accounts of current and former innkeepers who tell the truth, shedding light on both the positive and negative aspects. Use it as a guidline when forming your business plan--and know it is essential to have a business plan. It will help you consider things you might not have thought of otherwise. If this is a project or lifestyle change you wish to undertake, I highly recommend this book.

I was very impressed with the wide range of topics covered. Such as buying in bulk, reservation scripts, cancellation policys, when a laundry service makes sense, hiring employees, and the "do you have what it takes to run a B&B test". I could have saved a lot of time and money if this book had been available when I was first starting out.

One of the things on my to do list was to put together all of my thoughts and blog articles into a book on Innkeeping which updated all of the prior ones that are no longer available. Now I am just thrilled that Mary White has written the definitive work on Innkeeping, and, of course, now I don't have to do it.
We tell our prospective innkeepers in our Seminars on Innkeeping a lot of the information that Mary has compiled, but here it is all in one place and easily accessible to everyone. Nothing left out and a clear understanding that Innkeeping is a 24/7 job with a lot of sacrifices. It is not retirement, and it is not Bob Newhart in a cardigan sweater. Mary lays it all out for the reader, clearly and with all of the downsides, as well as the joys of sharing your lives as innkeepers with some of the greatest guests that you could every hope to meet. We always said that they came as guests and left the Inn as friends. Mary has shown us all the way to do this effortlessly and with good humor.
This book will be a must read for innkeepers and prospective innkeepers alike. Great job, Mary!

This book covers almost all potential areas that you'll need to know to run a professional B&B, and the level of detail will quickly dissuade anyone who isn't serious. That having been said, anyone who does want to run a professional bed and breakfast will find the information invaluable. The forms included on the enclosed CD pay for the book themselves--everything from employment applications to inventory forms, invoices, standard recipe cards, and kitchen safety inspection forms. The book covers all stages of the planning and setup process, including business plans, marketing and promotion, safety, and employees. Particularly useful is the section on marketing, something that most B&Bs that I've known tend to ignore. With a little creativity (and there are lots of suggestions contained in this chapter), your B&B can become part of the very identity of the neighborhood or city you live in, as in, "If you want to capture the flavor of X, go to this B&B!" The only change I would make to the book would be to make the section on writing business plans a more user friendly for those B&B owners who have never opened a business before. Nevertheless, the book contains lots of hardheaded business sense, presented plainly and clearly, with many good examples of existing B&Bs to illustrate the point. While you may not need all the information included when you first open your business, this book will provide you with lots of options for a time when you're able to expand. I recommend this book to anyone seriously considering going into the B&B business as a business, rather than just a way of pouring money down the drain!
